My interest in vinegar was peaked earlier this year upon tasting and using a corporate Christmas Gift which included a California Stone fruit vinegar, used it all, and now, cant buy it! After some research, I am attempting to make my own. My approach is to make champagne vinegar then add stone Fruit to it to flavor it. Just got my shipment of white wine mother from Supreme Vinegar, via Amazon. I would love any pointers or recipes you have for champagne Vinegar or any advice for the cause.

Hi Colleen thanks for the post. I can say that make sure to remove sulfites and combine the champagne wine with water and mother in the ratio 2:1:1 (wine:water:mother), so about 32 oz total. You can add stone fruit at the beginning or end depending on your preference. If you have any specific questions, please contact me directly.
